THE DOMAINE DE L'ERABLE RECOMMENDATION IN "LE PETIT FUTE":
"Begun in 1986 in the town of Courgis, the Domaine de l'Erable has gradually added vineyards in Beines and Chablis and now occupies almost 15 hectares. Planted almost exclusively facing south, they offer wines with a deep rich aroma. They produce both Chablis and Petit Chablis, with a careful selection of grapes and using traditional vinification to highlight the freshness and minerality to their wines. "Vineyards in Chassignelles? Surely not! But a very nice Typical Burgundian cellar, though! Indeed, Joel Bon ans his son Julien grow their grapes in the vineyards of Chablis. A wine of great intensity that has found a balance between the mineral freshness and roundness of the fruit. The nose of citrus is a good start for this 2010- best served as an aperitif or with seafood".

The Chef Patrick ASFAUX, a former Michelin starred chef, discovered the wines of Domaine de l'Erable at the wine fair of Rosny sous Bois in November 2011. With his culinary talent he achieved great recipes with our wines, such as calf's head and tongue Chablis, Monkfish medaillions Saint Jacques and Mussels Chablis. Julien and Delphine BON especially salute and thank him for his sympathy and talent!
